Originally from the State of Mexico, Carlos Borboa studied gastronomy at the Colegio Superior de Gastronomía in Mexico City and the Universitary School of Hospitality and Tourism Sant Pol de Mar in Catalonia, Spain. He holds postgraduate studies in French gastronomy from l’École Ritz Escoffier and l’École Lenôtre in Paris, France.
Carlos Borboa is a certified sommelier by the Asociación de Sommeliers Mexicanos.
